West African Coconut Caramel Candy


1 medium coconut

1 cup granulated sugar

1 teaspoon salt



Break open the coconut, separate the meat from the coconut shell with the aid of a knife, wash and grate the coconut with bold part of the grater. Add salt to the grated coconut, mix till well incorporated.

Put sugar in a pot, apply low heat, stir at intervals till it melts and turn to golden brown.  Add the grated coconut. Stir continuously the grated coconut is completely solid, absorbed and brown in colour.

Transfer to a flat plate to cool and congeal. Mould into balls or shape of choice. Enjoy your snacks with your favourite soda or wine!
