All the starchy foods grown on the continent are also cultivated in East Africa, although the root vegetables are not as popular as corn, rice and bananas. The Matoke banana is the reigning variety of that species and gives its name to the starch staple of Uganda.
12 Matoke bananas (small green ones)
Salt (optional)
Peel bananas. Leave whole or cut up. Place in a steamer with a small amount of boiling water and steam until bananas are soft, 20 to 30 minutes, depending on size. Mash and season with a little salt if desired.
