Lookdam rice cuisine – Original creation

Lookdam rice cuisine is extremely tasty and easy to make. Lookdam rice is something I invented. This meal derives its name from the 2 places I was supposed to be on the day this delicious meal was created! I was supposed to go to either Kijkduin (which is a beach in The Netherlands) or De Dam (which is a popular square in Amsterdam). Kijk is the Dutch word for “look” in English! So I added “look” to “dam” and the name was born!  I had time in my hands so I decided to experiment. I am not a born cook. I actually leaned to cook at an old age but this is the first time I decided to be creative in the kitchen. I am glad I did! It looks from afar like the popular Jollof rice of West Africa but the Jollof rice purists would have been tough on me if I had called this Jollof rice! It isn’t. It is Lookdam! What a treat!

Ingredients

Rice
Any kind of meat you prefer
Tomato puree
Spices and herbs
Salt
Cooking oil
Plantain
Carrots and green peas
Boiled eggs
Chili pepper (optional)

Add some spices and herbs to the meat and let it cook for 30 minutes.
Add cooking oil and tomato puree. Let it cook for 10 to 15 minutes
Add rice. Let it cook for 2 to 3 minutes
Reduce the cooking temperature to the barest minimum or completely switch off the electric or gas cooker. The warmth of the cooking plate will allow the food to cook.
After 5 minutes add the carrots and green peas. Stir to prevent the rice from sticking to the bottom of the pot and getting burnt.
Add some sliced plantain. Give it 2 minutes for everything to gel together

Your delicious Lookdam rice is ready to eat!
