Another West African recipe from Liberia. This dessert uses the popular pumpkin. Top it with your favourite icing.
½ cup butter or margarine
1¼ cups sugar
2 eggs
2 cups sifted all-purpose flour
1 tablespoon baking powder
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon salt
1 cup canned pumpkin
¾ cup milk
½ teaspoon baking soda
Preheat the oven to350°F. Cream the butter, add the sugar, and blend the two together thoroughly. Beat the eggs and add them to the butter,mixing well. Sift together the flour,baking powder, spices, and salt. In a separate bowl, mix the pumpkin with the milk and baking soda. Add the dry and liquid ingredients alternately to the egg mixture, blending the batter well. Bake in two greased layer pans for about 25 minutes, or until the cake tests done. Let it cool in the pans for a few minutes, then turn out on a cake rack to cool before frosting.
