Take a moment to appreciate Ghana’s culinary wonders. Go and prepare yourself a tasty Ghanaian peanut butter soup.
Ingredients:
150g tomato puree
3 medium onions
130g green peas (optional)
70g Carrot
150g tomatoes (I used my self-grown cherry tomatoes!)
1 medium courgette
300g peanut butter
2 habanero /scotch bonnet pepper
2 chili pepper (optional)
2 bay leaves
Spices of choice
1 clove garlic
10g ginger
Salt to taste
1 kg (Hard) chicken
1000 ml water
Preparation:
In a bowl mix 300g peanut butter and 150 ml cold water and mix. Then add 150 ml warm water and blend till fine. Set it aside
In a pan, add 150g tomatoes , 2 habanero /scotch bonnet pepper, 2 onions, 1 courgette, 70g carrot, 10g ginger and 200 ml of water and cook in medium heat for 7 minutes. Then use a blender to mix all the vegetables together and set aside.
In a cooking pan add 1 kg of (Hard) chicken cut into pieces. Add 1 sliced onion, 2 bay leaves & spices of choice and salt to your taste. Stir all together then cook in medium high heat till the chicken is soft to your taste. Add 150g tomato puree and let it cook for 5 minutes. Add the blended vegetables. Stir and cook for 5 minutes. Optionally, add 130g green peas. Add the liquid peanut butter mix. In low heat let it simmer for 10 minutes. Voila! Your tasty Ghanaian Peanut Butter Soup is ready to eat! Serve with rice or Banku!
